If you’ve ever traveled to China or joined a China food tour, you’ve probably heard people talking about Baijiu (白酒). Often called “China’s national drink,” Baijiu is a distilled spirit made mainly from sorghum and other grains. While the name translates to “white alcohol,” don’t confuse it with vodka or gin. Baijiu is truly unique, both in its history and its taste.

A Spirit with 1,000 Years of History

Baijiu is more than just a drink - it’s part of Chinese culture and tradition. Archaeological evidence shows grain-based spirits in China dating back thousands of years. Today, Baijiu is an essential part of weddings, family banquets, and business dinners. A toast of Baijiu is never just about alcohol; it’s about respect, friendship, and building connections.

How Strong is Baijiu?

One reason Baijiu surprises first-time drinkers is its strength. Most bottles range from 40% to 60% ABV, which makes it stronger than wine, sake, or most beers. But don’t let that scare you away. The flavor profiles are complex — ranging from fruity and floral to earthy and even savory.

Different Aromas and Styles

Baijiu isn’t one single taste. It’s usually classified into several major “aroma types”:

  • Sauce Aroma (酱香型) -The most famous style, led by Moutai (茅台). It has deep, layered flavors with notes sometimes compared to soy sauce or umami.

  • Strong Aroma (浓香型) - Represented by Wuliangye (五粮液) and Luzhou Laojiao (泸州老窖). Bold, sweet, and full-bodied.

  • Light Aroma (清香型) - Fenjiu (汾酒) is the classic example. Clean, crisp, and approachable for beginners.

  • Other Types – Such as rice aroma and mixed aroma, popular in certain regions of China.
